International Travel with your child

I travel internationally a couple times a year and am currently scheduled to have to go to Canada for work when my little one should be a couple of months old. I'm planning to travel with her and my mom. I'll pump between meetings and my mom will care for her during the conference.
Doing some research on travel as a single parent, I discovered that many countries, including Canada, want either a permission affidavit from the non travelling parent or a death certificate or custody agreement saying that parent has no custodial rights. Obviously none of those are my situation as a SMBC. I'm planning on getting a notarised letter stating that there is no father and using the birth certificate which will just have my name on it (plus the baby's passport)
But I was curious if any of you SMBC have faced this situation or have samples of letters that you have used.
Also, any of you gotten passports for your little ones. I think I need the same type of information for that since the US requires both parents to sign a minor's passport application.
I'm getting excited as I approach my 3rd trimester!

Before You Start, Please Note:
Minors under age 16 must apply in person
All minors regardless of age, including newborns and infants, must have their own passport when traveling internationally by air
Learn if your child requires a U.S. passport to travel by land or by sea.
Special requirements for All Minors Ages 16 & 17
Special requirements for individuals applying from outside the U.S.
And it looks like if you show the birth certificate with just your name, then it wouldn't be a problem, right??? So weird, I didn't realize infants needed passports! But I guess a good idea...=)
